I'm going to try a couple Shaver Heaven soaps which @nsavage had for sale, looking forward to trying them out. I'll also consider the brushes on the Stray Whisker. I've been using the Body Shop one for quite a while now so I don't mind investing in a new one, then I'll have something to compare it to. Some of the designs are very nice.

Those Stray Whisker brushes are extremely well priced. I think you would be very happy with one of those.

Hey there @rc89 ! Glad you've been made to feel welcome from all the advice given so far. Keep asking the questions as there are plenty to give you answers.
As for your initial questions:
1) Yep. Ron is a great bloke to buy from and you'll get a shave-ready str8 from him no probs.
I'm no expert but that razor looks good to me as well. The 5/8 is a good size to learn on and the Henckels is a reputable razor. You always get more for your moolah with a vintage razor. Once you've got it down pat, then there are plenty of sweet str8 razors out there including plenty made here in Australia.
2) For strops I reckon you're better off asking on here for someone's spare strop. Your first one doesn't need to cost a fortune as you may very well slice it. And for that $ you could get a much better quality strop. The extra wide (3 inch) is good as you can simply go back & forth.
Shaving with a safety or str8 razor is a lot about technique. Especially with a str8 you need to build muscle memory from regular practise. I suggest even beginning now to watch a video on stropping and use a butter knife on folded newspaper to get underway. By the time you get your gear you'll be well on the way...

I've started watching the Mastro Livi School videos, learning a lot from them, and I'll likely revisit them once I've received everything I've ordered.
